Cocoanut ice
My grandmother made her living with home made sweets. She became diabetic and her son became a dentist. Now that I’ve discouraged you from ever eating antique sweets, here’s a recipe from her notebook.
Cocoanut ice
1 cup sugar
1/4 cup milk
2 tbs grated or dessiccated cocoanut
Boil everything for six minutes. Remove from fire and stir until mixture thickens. Pour into a wet dish and let cool. Cut into squares before entirely cold.

This sounds like it has as much sugar in it as Akutaq (ah-GOO-duck), a Yup’ik dessert. The modern version of this uses shortening.
Traditional Akutaq
• 1 pound dried (grated or shredded) reindeer fat
• 1 cup seal oil
• 1 pint salmonberries
• 3 cups blackberries
• 1 cup sugar
>> Slowly add seal oil to reindeer fat, beating by hand in large bowl. Add a little water while whipping mixture. Keep adding oil and water until white and fluffy. Add berries and sugar. Amount of sugar can be adjusted according to taste.

I *so* much want to try Akutaq now (seriously). Anyone know anywhere in Oz where I can obtain reindeer fat, seal oil and salmonberries?

Well I’m the greatest coconut lover in the world so I might just try this out, Also, I;m not a great cook and everything with more than 3 ingredients and 3 steos scares me (just kidding - but I will try this soon.)
Great blog, btw - but like I said - I always think “that sounds great!” but then am too laze to try it out!

This is entirely safe for non-cooks and lazy cooks and anyone who wants food without actually doing much :).
