Time out - we all need cake
It’s been a big week and I’m tired. I still have a couple of posts I promised you, and I will get to them, just not tonight. Tonight I’m going to post the usual thing I post when all I want to do is curl up in a corner and take a nap: recipes from my grandmother.
It’s a good time of year for these recipes. Firstly, it’s autumn in northerly climes, and the snap to the air (if it hasn’t come yet, it will) ought to be getting you in the mood for leisurely afternoon teas. In Australia it’s that frantic end-of-year-get- everything-done-before-the-heat-takes-over -and-turns-us-all-somnolent time. We need to slow down enough to remember that life is worth cherishing. Time to slow down and have time with friends. This requires leisurely afternoon teas. For leisurely afternoon teas you need cakes.
Chocolate Eclairs & Cream Buns
1 ½ oz butter
whipped cream
choc icing
1 ½ gills water
3 oz flour sifted
vanilla
2 eggs
Put water & butter in a pan & when boiling ad the flour. Stir quickly in the same direction & cook for about 10 mts beating all the time. The paste should leave the sides of the pan without sticking. Cool slightly & beat in eggs. Add flavouring. Cool & if for buns place small round lumps on a greased baking sheet. Bake in a moderate oven for 20 mts. Cool on a sieve. Make a small incision in the side press down with the finger & put in whipped cream sweetened to taste. Stand on the rack & coat with icing sugar. To make eclairs, use an icing bag with screw only, & force small rolls in place of lumps.
Strawberry Meringue
Make a pastry shell. Fill while hot with berries sprinkled with sugar. Pile a meringue on top & return to the oven for 10 to 15 minutes. Serve at once.

Mmmmmmmmmmmm. Chocolate eclairs. Good thing I’m going shopping today!
I’m getting into cranberry mode myself. We love homemade cranberry sauce, still warm, spooned over angel food cake. Low-fat and yummy too.

Home made cranberry sauce is so much nicer than the bought stuff. Alas, that fresh cranberries are so rare in Australia!
